The Cheesecake Factory Luau Salad
1 lb mesculin mix
1 lb grilled chicken breasts, sliced into thin strips
8 oz red bell peppers, sliced into thin strips
8 oz yellow bell peppers, sliced into thin strips
8 oz fresh green beans, blanched, cut into 3" pieces
8 oz cucumber slices
4 oz red onion, cut into small pieces
8 oz fresh mango, cut into small pieces
1 tspn kosher salt
¼ tspn ground black pepper
1 cup balsamic vinaigrette
¼ cup seasoned rice vinegar
¼ cup granulated sugar
1 tspn sesame oil
8 x 6" egg roll wrappers, fried crisp
4 oz sweet and sour sauce
4 oz macadamia nuts, toasted and chopped
1 tbsp sesame seeds, toasted
4 oz carrots, peeled, sliced into 1" thin strips
1 oz green onions, sliced into 1" thin strips

Place the lettuce mix, chicken, bell peppers, green beans, cucumber slices, red onion, and mango, into a large mixing bowl. Season the ingredients with salt and pepper. Whisk together the balsamic vinaigrette (your favorite choice), seasoned rice vinegar, granulated sugar, and sesame oil. Drizzle the dressing into the bowl with the salad ingredients, and gently toss together. Brush a little sweet and sour sauce onto each crispy egg roll wrapper. Build the salad in each serving bowl with alternating layers of salad mixture, a crispy glazed egg roll wrapper, more salad mixture, another crispy glazed egg roll wrapper and then the remaining salad mixture. Sprinkle the macadamia nuts and sesame seeds all over each salad. Garnish each salad with some thin sliced carrots and green onions. Serves 4.

So many things in my life right now are in His hands...

1. the house
2. my friend who isn't sure who God is anymore
3. my kids who are starting a new school year with new challenges ahead
4. my new love relationship with Jesus - depending on Him in new ways as He leads me into deep waters of contentment and I throw off the sin that has entangled me for so long

There are many more things but these are the most pressing on my heart right now! Take them all Jesus and take me! I want nothing more than to rest in the arms of my loving Savior and to lay these cares as Your feet for You are near and I will be anxious about nothing but instead, with a heart of thanksgiving for all You have done and the faithfulness You have demonstrated despite my failures, I will present my requests to You knowing that when You are at work, Your peace will guard my heart and mind!

Let me be found in You...at rest in You...satisfied and content in all things! Thank You for the suffering I've endured in my very short life on this planet because it gives me opportunity to shine for You and be like You! I count it all joy to be found in You!

The Lord is good...to all, all the time!

I pray that I never forget this truth! May my life be lived in the full understanding of this revelation! If someone asked me to tell them the most important lesson I learned this summer, I would tell them that God is merciful, gracious and kind all the time, beyond all human understanding without any contribution on my part. His very nature is good - giving - gracious. Lord, let me rest in this understanding and strive to be like You with every breath I draw! I love you, oh my Rock and Redeemer!

Sandcastles and more!

Join us on Thursday afternoon at the Edmonds Marina Beach to look at the results of the annual Edmonds Sandcastle Contest! VBA at Westgate Chapel ends at noon. Grab a lunch and head down to the beach for an hour or so - walk around and see the sand - bring a chair/blanket/beach toys and stay a while! See you then!

Thursday, July 16, we are heading to Jetty Island in Everett. We'll spend the day splashing, sunning, and laughing. If you can come, meet us at Westgate Chapel: 22901 Edmonds Way, Edmonds, WA 98026 at 9:30am. We can caravan to the ferry landing in Everett.

Please don't forget sunscreen, a lunch, a sun umbrella, and beach toys. It's gonna be a great day!

Hey all you super summer funday friends!!! This week's adventure is to the Biringer Berry Farm. They've moved the berry operation to Arlington and the berries are amazing! We'll meet at Westgate at 10:30am. Make sure to pack a lunch for your kids and plenty of water. There isn't any place to buy food. Well...you can buy berries. :-) There is a playground and there are honey buckets available. Bring a wagon if you have little ones because they might get tired.

Directions: North on I-5 to exit 208. Turn right and travel approx 2 miles until you see the Biringer Farm on the right.

Thursday, July 2 is Aquarium Day! We will visit the Seattle Aquarium on the Seattle Waterfront. I've put the link to their webpage where you can find all the info you need to plan a perfect day.
